Indo-Mexi fusion foods are my favorite and I love experimenting with different flavors and styles. I recently tried creating a Paneer Tikka Quesadilla for the first time and and shared it on Instagram - I was blown away with the response! After receiving numerous messages about how I made it, I finally decided to expand my blog into including recipes.
Sharing recipes is something I've wanted to do for a while. What better way to start than by sharing a fusion of my two favorite cuisines! If you're looking for something incredibly easy and flavorful - Paneer Tikka Quesadillas are for you!
The part the takes the longest is waiting for everything to marinate and bake. After that - it's super quick!
To prepare the marinate - you want to mix together yogurt, spices, paneer, and vegetables (see the recipe below for exact instructions). I buy refrigerated paneer from my local indian grocery store as well as spices. The Paneer Tikka Masala I used specifically is from Aachi and the other spices I used are bought from local indian grocery stores as well.
I let it sit for about an hour and then bake it for approximately 30 minutes at 350 degrees. Less time if you like it soft and more time if you like your paneer crispy.
After it's done baking, I turn my stove on medium heat and put a tsp of oil in my fry pan. I then put the flour tortilla on and put on a layer of cheese on half the tortilla and then the paneer and vegetable mixture on top. Fold the tortilla in half and cook it on both sides for about 2-3 minutes on each side.
If you like your food to be on the spicier side, garnish with green chile pepper!
Quesadillas meet an indian kick with paneer tikka masala! A super quick and easy recipe, this is perfect for all of you who enjoy flavorful food!
In a small tray: mix yogurt, masala, chile powder, turmeric, ground coriander, ground cumin, and salt.
Chop onions, bell pepper, and paneer into long, thin strips and add it to the mixture. Cover it and let sit for 1 hour.
Bake marinate for 30 minutes at 350 degrees.
After the marinate is done baking, add a tsp of oil onto your fry pan with the stove on at medium heat. Place flour tortilla on pan and add shredded cheese and baked paneer and vegetable mixture on top. Close the other half of the tortilla and cook on both sides - approximately 2-3 minutes on each side.
Garnish with chopped chile peppers and enjoy!
